  • PAM® Original No-Stick Cooking Spray
  • 2 cups popped Orville Redenbacher's® Smart Pop!® Butter Microwave Popcorn, crushed into crumbs
  • 1/3 cup dry roasted peanuts, finely chopped
  • 1/2 cup Egg Beaters® Original
  • 1 teaspoon La Choy® Soy Sauce
  • 12 boneless skinless chicken breast tenders (12 tenders = 1 lb)
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup La Choy® Sweet and Sour Sauce

About our Nutrition Information


  1. Preheat oven to 375°F. Spray baking sheet with cooking spray; set aside.
  2. Combine popcorn crumbs and peanuts in shallow dish; set aside. Whisk together Egg Beaters and soy sauce in another shallow dish.
  3. Sprinkle chicken with salt and pepper. Dip each tender in Egg Beaters mixture, then roll in popcorn mixture. Place coated tenders on baking sheet.
  4. Bake 10 minutes. Turn tenders over. Bake 5 minutes more or until no longer pink in centers. Serve with sweet and sour sauce for dipping.

Cook's Tip

To crush popped corn, place in resealable food storage bag; seal bag. Roll with rolling pin until crumbs are formed.

My fiance and I disliked this recipe so much that we actually threw out the leftovers (which there were a LOT of). I don't think I've ever thrown out leftovers before this. This recipe is very bland. I wouldn't recommend this recipe to anyone who likes any level of spices in there food. If you don't believe me just look at the ingredients and think about it...popcorn, peanuts, teensy bit of soy sauce... The only flavor was from the sweet and sour sauce. Personally, I like my chicken to taste like something besides, well, plain chicken.

There are not words enough for how popular this recipe was in my house. So popular, in fact, that when I went to categorize it as 'household for kids' I stopped because my child's love was overshadowed by my HUSBAND'S LOVE. It was fun to make (there were enough steps to allow my 5 year old to feel as tho she were cooking. few enough that her mama didn't feel as though she were slaving away in the kitchen, err, *cooking!*), involved smashing (whats not to love about that), and appealed to both of their taste-buds. We had no leftovers. TIP: I put the crumbs mixture into a Ziploc bag and shook the chicken in it. Not sure it was easier---but it was fun. In addition if you are on a low-sodium diet you can easily substitute plain popcorn for a few pieces of chicken.
