PAM® Original No-Stick Cooking Spray
3 cups popped Orville Redenbacher’s® Gourmet® Naturals Simply Salted Microwave Popcorn, divided
2 cups original baking mix
3/4 cup reduced fat (2%) milk
2 eggs
1 teaspoon vanilla extract
5 slices fully cooked bacon, chopped
2/3 cup Log Cabin® All Natural Table Syrup

Spray large skillet or griddle with cooking spray. Heat skillet over medium heat until hot or heat electric griddle to 375°F. Reserve 1 cup popped corn; set aside. Place remaining 2 cups popped corn in resealable food storage bag and crush into coarse crumbs.
Whisk together crushed popped corn, baking mix, milk, eggs and vanilla in medium bowl until blended. Place about 1/4 cup batter onto hot griddle for each pancake. Cook 2 to 3 minutes or until bubbles form on top and bottom is golden brown. Turn and cook until second side is golden brown. Repeat with remaining batter.
Place 2 pancakes on each serving plate. Top each evenly with bacon and syrup. Sprinkle with reserved popped corn.

'Original baking mix' is a pre-mixed, multi-purpose baking mix, commonly with sugar, salt, butter or oil and leavening agents added. You can prepare your own at home, from common pantry staples, or for your convenience purchase in the baking aisle of your local grocery store (near the flour).
