4 tablespoons Blue Bonnet® Plant Butter
2 large sweet potatoes, peeled, cut into 1-inch pieces (about 2 pounds)
1 large clove garlic, chopped
1 cup plain soy milk
1 tablespoon nutritional yeast
1 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1 green onion, thinly sliced

Melt plant butter in a large saucepan over medium heat. Add sweet potatoes to pan and cook until they start to get tender, 5 to 8 minutes, stirring occasionally. Stir in garlic and cook 1 minute.
Pour in milk; bring to a boil. Reduce heat to medium-low, cover, and cook until potatoes are very soft. Mash sweet potatoes with a potato masher. Whisk in nutritional yeast, salt, and pepper. Garnish your savory mashed sweet potatoes with green onion and serve with more plant butter, if desired.
